Lemonade Stands and Strawberry Lemon Cookies

One of my favorite summer memories is having a lemonade stand. As a little girl, I wasn’t terribly entrepreneurial. In fact, I probably handed out more free lemonade to neighbors than money made, but it was the idea of creating something of my own and making a few new friends along the way that made it special.

 

My kids are no different.  They love having lemonade stands! I provide help with making the lemonade and cookies, but when it comes to the rest, it is all their own. And they sure know how to make some extra summer money while meeting neighbors.

This summer may feel a little different, but we can still find unique ways to engage with those in our community.  Whether you’re wearing masks, doing drive-by lemonade stands, or bringing it door to door, this is the time to get creative.  We may have to social distance at times but we can still find ways to be social and show appreciation to those around us.

When we have lemonade stands, we love to make some sweet treats to go with them. Our go-to cookies happen to pair perfectly with a lemonade stand. These strawberry lemonade cookies are delicious and incredibly easy to throw together.  I like to call them semi-homemade, since the flavor and chewiness is derived from boxed cake mixes.

Strawberry Lemon Cookies

These cookies are a burst of strawberry and lemon flavor and chewiness. And they are incredibly easy to make!

Ingredients

  • 1 box strawberry cake mix
  • 1 box lemon cake mix
  • 4 large eggs divided
  • cup vegetable oil divided
  • 2 tsp lemon juice divided
  • 1 cup powdered sugar

Instructions

  • Between two large mixing bowls, pour one box of cake mix into each bowl. To each bowl of cake mix, add 2 eggs, ⅓ cup vegetable oil, and 1 tsp lemon juice. Mix the batter in each bowl until smooth, combined, and free of lumps. Allow the dough to chill in the refrigerator for at least 15 minutes.
  • While chilling, preheat the oven to 375°F and prepare baking sheets. I prefer jelly roll pans lined with parchment paper or you can grease sheets with cooking spray.
  • In a bowl, add 1 cup of powdered sugar. Take the bowls from the refrigerator and roll a small bowl of strawberry dough (about 1-2 tsp depending on size of cookies you'd like) and repeat with lemon dough. With the two in your hand, roll the dough into one piece with strawberry on one side and lemon on the other. Gently roll each ball in the powdered sugar and place on the baking sheet. Repeat until all cookies are finished and on the baking sheet with about 2 inches between each cookie. Between baking, keep the dough chilled in the refrigerator.
  • Bake the cookies 8-10 minutes on the middle rack in the oven. Keep a close eye as the cookies bake fast. Remove from the oven and let cool.
